肉眼指的是里肋肉的中央部位,連接肩胛肉和西冷之間的部位。肉眼是由肋脊肉分切而得,它是第6-12根肋骨處所延伸之肌肉。此部位較少運動,所以油花分佈較多。

乾式熟成牛扒以特選赫里福德及安格斯品種牛隻生產,經乾式熟成處理後,肉質比一般牛扒更鮮嫰。

rib eye is the central part of the rib, connecting the part between the shoulder blade and the sirloin. rib eye is cut from the rib loin, which is the muscle extending from the 6-12th rib. there is less movement in this part and it has moderate marble.
