ichiyaboshi (salted and dried overnight) is a japanese way of preserving fish. soaking fresh fish in salt water and then air-drying it overnight. after processed overnight, the snapper can reduce the fishy smell and make the meat firm and smell oily. roasted or fried are recommended, also served with lemon juice.
