hokkaido pork is combining the usual three-way pork (landrace, large yorkshire, and duroc) with berkshire to achieve better meat flavor and meat quality. in addition, resource recycling agriculture is adopted in its production process, and compost from the farm is provided to contract farmers, who use the vegetables grown there as feed for their pigs. the hokkaido pork fattened by these designated farmers in hokkaido is raised on a special feed consisting mainly of wheat and potatoes, and has a high oleic acid content, which is an umami ingredient, resulting in pork with a sweeter taste. it is also characterized by the fact that it does not become tough even when cold.
