for general, japanese chickens are mainly divided into two categories, japanese local chickens and meigara chickens. breeds with more than 50% japanese ancestry are called japanese local chickens, in contrast, those with less than 50% are called meigara chickens. japanese local chickens are about 80 to 100 days old and adopts a free-range method. the meat is firm and has a strong chicken flavor. as for meigara chickens, they are raised artificially and are about 40 to 50 days old. due to their small size, the meat will be tender and smooth.
