牛小排取自牛隻的前胸肋骨 (short rib) 部位,油脂含量豐富且肉質結實,油紋分布集中且油筋及油脂分布較多,非常適合打邊爐或燒烤的方式。

from the rib ridge of a cow, the short plate is well muscled making the short rib slice fibrous with a proportionally large amount of connective tissue, and good for hot pot and barbecue.
